Full-Body Triply vs Triply Base Cookware: How to Tell Which One You Are Buying (India 2026)

Short answer: "Triply" on an Indian cookware listing can mean two very different pans. Full-body triply has the three layers — steel, aluminium, steel — running through the base and up the sides. "Triply base" (also sold as sandwich bottom or encapsulated base) has the three layers only in a thick disc on the bottom, with thin single-layer steel walls above it. Both work on gas and induction, but they cook differently, weigh differently, and should not cost the same. Most listings don't make the difference obvious, so this guide shows how to tell before you pay.

What does "triply" actually mean?
Triply means three bonded metal layers:
- Inner layer — food-grade stainless steel, usually labelled 18/8 or SS 304. This is what touches your food. It does not react with tomato, tamarind or lemon, so acidic gravies don't pick up a metallic taste.
- Middle layer — aluminium. Aluminium spreads heat quickly and evenly. It is the reason triply exists: plain stainless steel is a poor heat conductor on its own, so a thin steel pan scorches in a ring right above the flame.
- Outer layer — magnetic stainless steel, commonly SS 430. This layer is what makes the pan work on an induction cooktop, because induction needs a magnetic base.
The aluminium never touches food. It is sealed between the two steel layers.

Neither design is a scam. A triply base is a sensible choice for a pressure cooker or a boiling pot, where the job is to heat liquid from below and the walls barely matter. Where the difference matters is kadai, tasla and fry pans. When you bhuno masala or shallow-fry, food climbs the sides of the pan. On a full-body pan the walls are as hot as the base, so onions brown evenly around the edge. On a base-only pan the sides lag behind, and you end up stirring more to stop the centre catching while the edges stay pale.
How to check if a pan is really full-body triply
You can do most of these on the product page, before ordering.
1. Read the title and the specs, not the banner
Look for the words "full body", "fully clad" or "3-layer body". If the listing only says "triply base", "sandwich bottom", "encapsulated bottom" or "induction base", assume the walls are single-layer. Sellers who pay for full cladding almost always say so, because it is the expensive part.
2. Look at the rim in the photos
Zoom in on the cut edge of the rim. On many fully clad pans you can see a thin line where the layers meet — sometimes a slightly different shade of metal in the middle. A base-only pan has one uniform, thin edge. Not every brand polishes the rim the same way, so treat this as a strong hint, not proof.
3. Compare the weight
If the listing states item weight, compare it with a similar-size pan of the other type. For the same diameter, a fully clad kadai is noticeably heavier than a base-only one because the walls carry the extra metal. A 24 cm "triply" kadai that feels as light as a plain steel one is a warning sign.
4. The magnet test (once it arrives)
A fridge magnet should stick firmly to the outside base of any triply pan meant for induction. On a full-body pan it usually sticks to the outside walls too, since the magnetic outer layer runs all the way up. On a base-only pan it often won't stick to the walls at all. If the magnet doesn't stick to the base, the pan won't work on induction, whatever the listing says.
5. Watch the price
Full cladding uses much more metal and a harder bonding process. If a large "triply" kadai is priced like a basic steel one, check the listing again for the word "base".
Triply vs non-stick: when each one wins
Triply is not automatically better. It is better at different jobs.
Triply wins for:
- Tadka, bhuna masala and dry sabzi, where high heat and scraping would wear a coating out.
- Tomato, tamarind and lemon gravies — the steel surface doesn't react with acids.
- Deep frying — steady oil temperature and no coating to worry about.
- Long life. With no coating to peel, a good triply pan lasts many years, and metal spatulas are fine.
Non-stick still wins for:
- Dosa, cheela and omelettes, where you want the food to slide off with very little oil.
- Beginners who don't want to learn preheating.
- Quick, low-heat cooking and very easy washing.

Why food sticks to triply (and the fix)
Food sticks to steel when you put it into a cold or half-hot pan. The fix is preheating:
- Heat the empty pan on medium — not high — for 1-2 minutes.
- Flick a few drops of water in. If they sizzle and vanish, it isn't ready yet. When the drops bead up into balls and skate around the pan, it's ready.
- Tip the water out, add oil, let it shimmer for a few seconds, then add food.
- Don't move the food straight away. Paneer, fish and potatoes release by themselves once a crust forms.
Once the pan is hot, turn the flame down. Aluminium-core pans hold heat well, so they rarely need a high flame.
Cleaning triply: rainbow stains and white spots
- Rainbow or bluish tint is heat tint — a thin oxide layer on the steel from overheating. It is harmless. Wipe it with a little white vinegar, then wash as usual.
- White chalky spots come from hard water minerals, not damage. Vinegar or lemon removes them too.
- Burnt-on food: soak in warm water, then use a paste of baking soda and water with a non-scratch scrubber. Steel wool works but leaves fine scratches on the mirror finish.
- Dishwasher: only if the listing says so. Most triply sets sold in India are dishwasher safe, but hand-washing keeps the polish longer.
